Coldwater shrimp are smaller than warmwater varieties, averaging 5-10 cm in
length.
Their flavour is considered better, with a sweet, delicate taste compared to the blander warmwater varieties. When cooked, the shell turns bright pink and the meat inside becomes opaque white tinged with speckled coral pink.
